Cup Cakes

I had to bake German chocolate cup cakes yesterday to take to our church. We had our songfest yesterday afternoon and the ladies were asked to bring finger foods to eat after the program. I baked the cup cakes after hubby and I ate our lunch. I just used the ready made mix from the box and followed the directions. We didn't have frosting so I asked my hubby to go and buy a coconut pecan frosting. The cup cakes came out good and when it cooled down, I put the frosting on top. They were so delicious.

Pineapple Pecan Cake



I have a lot of pecans from our pecan trees in our backyard and so I searched for a recipe where I can use it. I've found this great recipe of pineapple pecan cake. I baked this cake and it came out so good. This cake comes out extremely moist and yummy and is a snap to whip up. It is especially good when topped with cream cheese frosting. It so happened that we invited our friend James to dine with us that time and I served the cake for our dessert. He really like it and also does my hubby. This cake is one of my favorites.

PINEAPPLE PECAN CAKE

INGREDIENTS

* 1 1/2 cups sugar
* 2 cups all-purpose flour
* 2 teaspoons baking soda
* 2 eggs
* 1 (20 ounce) can crushed pineapple, undrained
* 1 cup chopped pecans
* FROSTING:
* 1/2 cup butter or margarine, softened
* 1 (8 ounce) package cream cheese, softened
* 1 1/2 cups confectioners' sugar
* 1 teaspoon vanilla extract

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. Sift together the flour, sugar and baking soda. Stir in the eggs, pineapple and vanilla, mixing until blended. Fold in pecans. Pour batter into prepared pan.
3. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
4. In a mixing bowl, combine all frosting ingredients; beat until smooth. Frost cake.

Crappy Fish


Just look at these crappy fish! One of our friends gave it to us. He went fishing in the lake and he caught a lot of fish. This is the second time that he gave us some of the fish that he caught. He's so generous. I love fish and I cook it Filipino style of course with the head and eyes. Hubby doesn't wanna eat fish with the eyes of the fish looking at him. He want the fish fillet without bones, eyes, head and tails, he-he! I told him that's the way we cook fish in the Philippines. We just fillet it when we eat it. So every time I cook my fish, I have to cook a fish fillet for him too that was bought from Wal Mart. Separate menu of fish. I like to cook my fish with vinegar, salt a lot of onions, garlic, black pepper and ginger. These crappy fish are so delicious. My hubby like his fish fried or baked.

Chicken Empanada


It's been a while that I haven't cooked empanada. My hubby likes it so I decided to make some yesterday. I just cooked 8 pieces yesterday and I put the remaining dough and filling (I used chicken) in the refrigerator. Then this afternoon I cooked all of it, 11 pieces. After I cooked hubby came in the kitchen and grabbed a piece. It was still hot, fresh from the oven. I prefer baked empanada than fried. My hubby loves it and he said he can eat it all. He said they are so good. Oh my, I told him to leave some for me because I was going to take a shower. I told him I will eat after I showered. He told me to hurry up before he can eat them all. I know he was just teasing me. He just ate three pieces then we went to church for the mid-week service. After we got home from church, we ate our supper and of course we also ate the empanada. It was all gone in a matter of minutes. Here's the recipe.

Chicken Empanada

Ingredients:

Dough:
2 cups flour
1/2 cup shortening
1/4 cup sugar
1/4 tsp baking powder
1 tsp salt
1 egg
ice water (enough to make a ball)

Filling:
1 chicken breast, boiled and himayin
2 medium potatoes, diced
1 carrot, diced
1 onion, diced
2 cloves garlic
canola oil
salt
pepper

Instructions:

Mix the ingredients for the dough. Knead it well using a rolling pin. If the dough is already okay and doesn't stick to your hands no more, cut it into pieces according to your desired size. For the filling, sautee the garlic, onion, chicken then add the rest of the ingredients. Put salt and pepper according to taste. If it's already cooked, let it cool first. Then form a ball of the dough that you cut into pieces and roll it with the rolling pin to flatten. Then put the filling about 1heaping tablespoon. Then wrap it. Use a fork to seal the edges. Beat 1 egg and just use the yolk. Apply it to the empanada using a brush before baking. Bake it for 20 minutes at 375 degrees.

Finally!!!

Thank God for I finally restored my template and my widgets. I got so disappointed for a couple of days after not being able to restore my template and my widgets. The Blogger Help Group had helped me in my dilemma and now I'm back on the right track. Thanks to all my fellow bloggers for bearing with me for a few days. Now you can see your links here. I am so relieved for I can now blog here as usual. I even thought of giving up on this blog and just create a new blog. Thank God for solving my problem.

I Can't Edit My Template Or Put Back My Widgets

I'm getting frustrated with what happened to my template. I switched to classic template because my customized template kept having some problem whenever I view it. Switching to classic template was a big mistake because I can't change or edit my template no more. I can't even add a page element now so I can't put back my widgets. This thing is driving me nuts. I contacted blogger in help group but I got no response yet. I'm so sorry to all my co-bloggers who's links are supposed to appear here. If you happen to read this, please leave me a comment with your blogs' URL. If blogger can't fix this problem in my blog, I will just create a new blog. Sorry for the inconvenience folks. Don't ever switch back to classic template if you are using customized one. You will encounter the same problem I'm facing now. Does anyone encountered the same problem as I have now?

I was trying to paste back my old template but it won't come out. Something is wrong so right now I can't put back my widgets but I saved it in my computer. I will put it back as soon as I can. The Dangers Of Using Microwave

I personally stopped using microwave almost 2 years ago since I read about the dangers of using it. Eating microwaved food on a regular basis weakens your immune system and cause depression and anxiety. Parents who microwave baby formula are poisoning there children unknowingly because when you microwave anything, it becomes energetically toxic to the body. Oh well, people perish because of lack of knowledge. So when I read all about these articles, I tossed out our microwave and just reheat our foods on the stove just like we do in the Philippines. Only few people there own a microwave unlike here in the US wherein 98% of the people use microwave. Read further below.

Ten Reasons to Throw out your Microwave Oven

From the conclusions of the Swiss, Russian and German scientific clinical studies, we can no longer ignore the microwave oven sitting in our kitchens. Based on this research, we will conclude this article with the following:

1. Continually eating food processed from a microwave oven causes long term - permanent - brain damage by "shorting out" electrical impulses in the brain [de-polarizing or de-magnetizing the brain tissue].

2. The human body cannot metabolize [break down] the unknown by-products created in microwaved food.

3. Male and female hormone production is shut down and/or altered by continually eating microwaved foods.

Perhaps many of you won't agree with this article, but it's up to you. It's your life and your health anyway so take charge of your own. I'm just sharing what I learned.

Banana Royale


Hubby and I love eating banana nut bread. Hubby bought some bananas a few days ago and they are already very ripe now. He's been eating some of it but he doesn't want to eat them now that they are very ripe. He said it's too soft for him. So it's best to make a banana nut bread. I often make banana nut muffins and bread but this time I opted to just make banana nut bread. Both hubby and I love eating it for our snacks. It's really good...yummy. I want to share the recipe. Try it, it's worth the effort.

Banana Royale
Preheat oven 350 degrees.
Ingredients:
1 cup brown sugar
½ cup butter
2 eggs
1 tsp baking soda
1 ½ cup flour (all-purpose)
1 cup pecan nuts chopped (optional)
½ cup sour cream
1 tsp baking powder
2 mashed bananas
1 tsp vanilla
1. Mix butter (melted), sugar, eggs, nuts.
2. Dissolve baking soda in sour cream.
3. Add baking powder, mashed bananas, vanilla.
4. Stir in flour.
5. Bake (muffin) 15 mins.
(loaf) 45 mins/40 mins.
